Everyday Pancakes

We made these pancakes a lot. Especially when all of the regular breakfast choices have been gobbled up. My kids love them stacked with fruit on the side. They are quick and easy, plus you get to hide some things in them that maybe your kids don’t normally eat. Best eaten when hot, but also make an ideal snack when your out and about.

SERVES 2

  • 1 1/5 ripe bananas

  • 1 1/2 cups of Oat flour (just blitz your oats in the blender or food processor first until fine.) You could also substitute for plain flour.

  • 1 cup of mylk ( your choice, they all work)

  • 1/2 tbsp baking powder

  • 1 tsp vanilla essence (optional, if you have it in the cupboard)

  • 1/2 tbsp Oil and a little extra for greasing the pan (we like coconut oil)

OPTIONAL EXTRAS WE CAN’T BE WITHOUT

  • 1/2 tsp cinnamon

  • pinch of nutmeg

TOPPINGS

  • Fresh fruit

  • Maple syrup

  • Melted chocolate

METHOD

  1. Add all your ingredients to your blender (not including the toppings. Save those for the end). Blitz until smooth, about 40 seconds.

  2. Preheat your pan over a medium heat,

  3. Lightly grease your pan.

  4. Scoop or pour out 1/4 cup of batter onto the pan (we can usually make 4 simultaneously) and cook until the top is opaque and the edges are dry.

  5. Flip over and cook until golden.

  6. Serve with your favourite toppings.
